Wild Beer Squashed Grape

After using the must of the foot stomped grapes, we brewed onto the skins to extract the colourful tannins and propagate the wild yeasts and bacteria that have been fermenting natural wines for millennia. It was fermented very warm to allow the natural cultures to thrive and lactic acid starts to develop. We then moved Squashed Grape into one of our Foudres to impart a gentle oxidisation and acidity from the natural Somerset cultures with a little more tannin to round off the dry finish. Look out for a rich, fruity flavour of plums and red grapes, and a good body and mouthfeel, with dry tannins and sharp balanced acidity.
